Can you believe it?! School is almost out and summer is here. This crazy winter is behind us and the fun is about to begin. As a very active person I try to do all kinds of cool things in the summer and it brings to mind a great topic.   How do you cover your hair?   Beach in a shaitel? I dont think so – at least not me! Well let me tell you a well kept secret... The headwrap will cover areas and give them confidence when they go out in public.  

  Ingrediants:  1 egg, beaten 1 container  (15 oz.)  Ricotta Cheese 2 cups Shreded Cheese Blend 1 Tbsp. Italian seasoning 1 jar  (26 oz.) spaghetti sauce, divided 16 lasagna noodles, cooked 1/4 cup  Grated Parmesan Cheese   HEAT oven to 375ºF. MIX first 5 ingredients until well blended. SPREAD 1/2 cup spaghetti sauce onto bottom of 13x9-inch baking dish. Spread each noodle with 3 Tbsp. cheese mixture; roll up. Place, seam-sides down, in dish. Top with remaining sauce and Parmesan; cover. BAKE 40 to 50 min. or until heated through, uncovering the last 10 min.  

Now that it's finally summer, I took a quick jaunt to the beach with my three kids. I had just finished readjusting my pretied bandana and was helping my three-year-old dig up her small neon-green Croc from the sand when I almost FLIPPED OUT!   About three feet away from me stood another religious lady at the beach in – I kid you not – a Shaitel. Yes! She apparently put on her fine, custom, $3,500 + wig to go to the beach?! Oxidize much?!   “You have got to be kidding me!” was my first reaction.   Then my not highly conditioned enough reflex of “different strokes for different folks” kicked in. I glanced again at the lady, pulled the two ends of my kerchief out of habit, glanced at the wig wearing lady again, and then stared out to sea, deliberately keeping my “new friend” and her Shaitel out of sight…. trying to behave…   Someone tapped me and I jumped! “Sorry!” I heard a timid voice break through my grumping. “I didn't mean to scare you. I just wanted to know where you got that pre-tied. Sorry!”   I lifted me kerchief-clad head and stared at – you guessed it – my wig clad “neighbor,” I restructured my grimace into a lopsided grin, clumsily got to my feet and stuttered, “Ooohhh! T- Th- That's okay! It-it-it's no pro-prob-problem. Reeeaally!   I quickly studied her appearance and came to three conclusions: She cared how she dressed, she knew how to dress, and she always looked great – from the sole of her shoe to the top of her hat – well shaitel!   “So, anyway, where did you get that pre-tied?” she prompted.   “I go to www.MillineryShop.net. See, I would never even think of going to the beach in a Shaitel, even if it was a cheaper one. It would get completely killed, besides that it's so uncomfortable… and.. oh! Yeah! This Millinery Shop is really great they like sell everything you need in the way of head-coverings, like everything. They've even got Shawls and Costume Jewlery. They have pre-tieds, bandannas, hair clips, kerchiefs, snoods, tichels… um mitpachot turbans and even hair clips and jelly bands… I mean they have everything! Um..” I was babbling and I knew it.    “They've go it all. Seriously! Check them out… they have something for every taste and need. They're even well-priced.”   “What's the name of the place again?” she asked. And I proceeded to give her the information. We talked for a few minutes more and then she turned and walked away, her wig winking in the sunlight. It's funny! Now it looked a drop more blondish, before I had been positive it was brown. “I guess my imaginations running wild again,” I mused as I reached up to pull the two ends of my pretied again… out of habit.  

  Home made bagels - so easy - so good.       1 1/4 cups water 4 1/2 cups bread flour 3 tablespoons white sugar 1 teaspoon salt 2 tablespoons vegetable oil  1 tablespoon instant yeast 4 quarts water 1 cup honey (optional) Directions Combine 1 1/4 cup water, flour, sugar, 1 teaspoon salt, vegetable oil, and yeast in the mixing bowl of a stand mixer.  Mix on low speed using the dough hook until well-developed, about 8 minutes. To ensure the gluten has developed fully, cut off a walnut-sized piece of dough. Flour your fingers, and then stretch the dough: if it tears immediately, the dough needs more kneading. Fully developed dough should form a thin translucent "windowpane." Transfer the dough to a lightly oiled bowl, cover it with plastic wrap and a kitchen towel, and let rise for 2 hours. Punch the dough down, place it on a lightly floured work surface, and use a knife or dough scraper to divide the dough into 6 pieces (or more, for smaller bagels). Roll each piece of dough into a sausage shape about 6 inches long. Join the ends to form a circle. Repeat with the remaining dough, and let the bagels rest for 15 minutes. Preheat oven to 475 degrees F (245 degrees C). Line a baking sheet with parchment paper. Arrange small plates with poppy seeds, sesame seeds, and onion flakes next to the baking sheet. Bring 4 quarts water to a boil in a large pot. Add honey, if desired (see Editor's Note). Boil the bagels, three at a time, until they rise to the surface of the pot, about 1 minute per side. Remove the bagels with a slotted spoon and place them on the parchment-lined baking sheet. Dip the tops of the wet bagels into the toppings and arrange them, seeds up, on the baking sheet. Sprinkle with coarse salt, if desired. Bake in the preheated oven until the bagels begin to brown, 15 to 20 minutes.   Adding honey or barley malt syrup to the boiling water bath gives the bagels a pleasing chewy texture with a hint of sweetness.
